Vanilla Panna Cotta Recipe

  • 1 cup (250 ml) whole milk
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons vanilla extract (or 1 vanilla bean, split and scraped)
  • 2 ½ teaspoons powdered gelatin (1 packet)
  • 3 tablespoons cold water

Instructions

  1. Prepare the gelatin – In a small bowl, sprinkle gelatin over cold water and let it bloom (soften) for about 5 minutes.
  2. Heat the cream mixture – In a saucepan, combine cream, milk, and sugar. Stir over medium heat until the sugar dissolves and the mixture is hot but not boiling.
  3. Add vanilla – Stir in vanilla extract (or scraped vanilla bean seeds and pod). Remove from heat.
  4. Incorporate gelatin – Remove the vanilla pod (if used). Add the bloomed gelatin to the warm cream mixture and whisk until completely dissolved.
  5. Pour into molds – Divide the mixture into ramekins or serving glasses. Let cool to room temperature, then refrigerate for at least 4 hours, or until set.
  6. Serve – To unmold, dip the ramekin bottoms briefly in hot water and invert onto a plate. Serve with fresh berries, berry coulis, caramel, or a dusting of cocoa.
